Our Journey

Catering Concepts is the umbrella company for a few different concepts and styles of catering. A natural progression for the variety and budgets needed when choosing a caterer.

We are Catering Concepts – aka Hibachi Xpress Catering. We are a LOCAL Catering business specializing in Japanese Hibachi Cuisine located in North Raleigh.

For the last 12 years, owner Ray Chow operated Hibachi Xpress restaurants in Cary, Raleigh, and Apex. We refocused our business in 2014 to Japanese Hibachi Catering.

Don't worry! We still make our sauces and dressings in-house with our famous 20+ year recipe!

Our Evolution

From a single restaurant to North Carolina's trusted catering partner

2001 Hibachi Xpress

We started as Hibachi Xpress, a local Japanese Fast Casual Restaurant, establishing our reputation for authentic flavors and quality service.

2005 Hibachi Xpress Catering

We started Hibachi Xpress Catering with our popular Hibachi menu, bringing restaurant-quality food to events and meetings.

2010 Catering by Ray

We expanded our catering menu to serve traditional fare at meetings, parties and weddings as Catering by Ray, diversifying our offerings.

2014 Catering Concepts

Over time, having multiple catering menu concepts, we started branding our business as Catering Concepts, focusing entirely on exceptional catering services.

Owner and founder of Catering Concepts NC, Ray Chow has been serving the Triangle area with authentic Japanese cuisine for over 20 years.

Starting with Hibachi Xpress restaurants in Cary, Raleigh, and Apex, Ray built a reputation for quality food and exceptional service.

In 2014, he focused entirely on catering to better serve the growing demand for professional event catering.
